Molotovs as they exist are a pretty recent thing, and to the best of my knowledge wouldn't be very useful on mud/dirt. Incendiary weapons have only ever really been used to cause damage to structures, since they're a bit of a misallocation of resources for anything else.

Also, no petrol until the 19th century.

I'm sure we could find some other burnable substance. Also, Molotovs can break a line of troops, and probably burn down a ship.

For ships you'd use regular old burning tar projectiles. For troops, we're fighting largely in natural spaces so you need something a bit more potent than alcohol or whatever to have a worthwhile effect. And still nobody does. Because it's not really effective in an open space. Maybe when we descend to the point of razing towns and villages from a distance then we'll consider it.

Don't think we have proper chemistry either. Maybe by the early to mid 19th century we could have a go at preempting various chemical weapons conventions.
Right now there's explosives and projectiles to work with and not a great deal else. That leaves some room for experimentation but we can't stretch too far.

Mortars are suprisingly simple since it's just a rounded smootherbane welded to flat piece with bipod to hold it, at the bottom of tube is a firepin which when a mortar is dropped is ignited and pressure fires it out I believe.
