Undead Giant Eagle head is un-killable

So, what to do with an undead Giant Eagle head that is totally mangled but un-killable.
My fighters are getting good training but they might die of exhaustion.
Can it be destroyed without magma?
Any good way to trap it and use it for training civilians and war dogs?

There is a bug that causes heads (and parts from heads, such as skin and wool) of sufficiently small creatures to be unkillable. The wool I encountered didn't fight back, so I could withdraw my militia (they passed out from exhaustion and were hungry and dehydrated), while others haven't been so lucky with their head parts. They can be caught in traps and they can be atom smashed.
Since it's a bug, I don't think "cheating" is cheating. I'd build one (if in a corridor) cage trap and station the militia elsewhere to have the head move until it's caught in the trap. If the head is fighting back you can't withdraw the militia, and in that case I'd install a door on the "safe" side of the trap and try to use the DFHack plug-in "fastdwarf" to teleport each militia member to a safe place and make the door unpassable (to stop them from rushing back). When the milita has stood down and gone back to training I'd unlock the door (to get the threat to have a path to your dwarves, and thus into the trap) while setting up a burrows to keep the dwarves out of the danger zone.
Using it for training is tricky unless you want to disengage via trickery each time. Also, I'd advice against using it for civilian training, since you're probably already in a state where a lot of dwarves are badly stressed from vengeful thoughts.

You could also use DFHack to kill the head directly. I think the command would be "exterminate him", with the eagle head being selected on the unit screen or 'v' view.

I am trying to make chickens lay bees as eggs. So far it only produces a single "Tame Small Creature" when a hen lays bees.
Honestly at the time, I didn't see what could go wrong with crowding 80 military Dwarves into a small room with a necromancer for the purpose of making bacon.

I'm using the Lazy Newb Pack and DFHack is a utilty that comes with the package, with apparently a limited range of functions, at least by what's shown in the LNP launcher.
I'm not sure exactly what DFHack is capable of in-game.
I can see various parts of DF affected by DFHack, for example the option to designate rooms to Mayors or other leadership roles.

Can I access the full range of DFHack functions in-game, or do I need to run a separate DFHack utility?

When you launch DF another window with DFHack is launched along it. This console window is where you type DFHack commands. Thus, you select the target in DF as indicated by Sutremaine, then change to the console window and type the command. Typing "ls" (Unix command for list, originally) in the console window will list all the command line commands available (that's also where "fastdwarf" would be typed, but "exterminate" seems more suitable).
