A hundred years is a little excessive. Most forts don't last a quarter of that. The rate of skill level gain could probably use a tweak though. Right now it's pretty easy to get up to Proficient, but it's almost as easy to go from Master to Legendary. The XP required to level goes up, but so does the dwarf's ability to level.

I think the sweet spot for a sharp increase in level-to-level XP is the point where Urist McRandom is producing goods mostly in the *superior* to =exceptional= quality range, with the occasional masterpiece and the occasional -dud-.

I cannot make my dwarves train their military skills at anything other than break-neck speed.
You could set their training patterns so that they're not training all the time. One month on, one month off, and you've instantly halved the skill gains.

I am trying to make chickens lay bees as eggs. So far it only produces a single "Tame Small Creature" when a hen lays bees.
Honestly at the time, I didn't see what could go wrong with crowding 80 military Dwarves into a small room with a necromancer for the purpose of making bacon.

My problem is that the dwarves will go and do "Individual Combat Drills" even when they aren't supposed to be training that month. The only way I can stop them is to deactivate their squad, but activating/deactivating each squad every month/season is a lot of micromanagement.

Oh yeah, that'd be a pain. Maybe you could do it when the elven and dwarven caravans arrive, since you're probably going to be managing trading as well?

Or maybe you could put the barracks so many tiles away from anywhere else that everything takes forever to get organised. Or... maybe you could put the barracks above a small pit lined with willow or something light, so that when they do start sparring, they'll dodge off the edge and have to walk all the way back up. Stick some 4/7 water in the pit, and you'll get a tiny bit of free Swimming skill.

Complicated, eccentric, otherwise completely unnecessary if not outright counterproductive ingame workaround for a bug or incompletely/non-ideally functioning feature? Extra Dwarf points to you, sir!

Ooh I really like this idea. I think I'm going to try something where I make their barracks a 1-tile wide pathway over a pool. The bonus of training swimmer is more interesting than slowing down training...I always have dwarves drowning...
For role playing purposes I'll think of it as High Intensity, Gladiator-style Sparring!
