How do I control the direction I throw somebody in?

You can't.

I would recommend sprint-jumping into them so they fly in the direction of the well.

I have a script originally intended to allow vertical leaping which Rumrusher added the ability to chuck other people around onto.

You can also do as said, run, target a grab but don't do anything else, jump through them, aim another grab, boom! Away they go.
