Right.  I volunteer as tribute to design the course list.
Core:
Math (Algebra I, Geometry, Algebra II, Precalculus, AP Calculus AB/BC.  Placement tests.)
English (Special courses AP Language and Composition and AP Literature and Composition, AP Lit is harder)
History (Generally, there's a parallel track of regular and AP courses available.  Also Economics is under the History department a lot of the time with its own AP course.)
Science: Biology, Chemistry, Physics, (assorted AP courses)

Foreign Language (This sort of occupies that weird slot between electives and core courses because you may not need to do it all the years.  Also, there are AP courses in quite a few.  French, Spanish, and German are common offerings.)

Non-Core:
Computer Programming (most likely in Java, although other languages like C and Python are totally possible) (Also, AP Computer Programming is a Java course.)
Music, various.
Music Theory (has AP)
Art (2D, 3D, digital / has AP courses)

US/UK have different things.
Also, presume an Honors variant of any given course exists should it not be an AP course.  And then the whole AP (science) is actually done after the run through Bio-Chem-Physics, and there's actually two AP Physicses.
Oh and my high school has a bunch of things like Anatomy, Earth Science, bla bla bla etc.

You realise its a) an International School and b) a supernatural one? At least, if they picked up Minako and Lieselotte (Japan), and Erlend and Isla (Scotland).

I highly doubt it would even fit American courses. Rosabel could, for all we know, be from England or Wales or something.

Veterinary Studies

-No equivalent to AP/Honor students, as most courses have enough people for about three classes. Instead, the best performing students are simply lumped together in one class.
-The core subjects here are English or doing both English Lit/Lang, depending on aptitude. Science is also core, with students doing all three Sciences or Combined Sciences depending on aptitude, again. Mathematics is the last core subject, and Statistics/Algebra are supplementary. All other subjects are supplementary.

I could seriously get behind handling the course registration (because after that it REALLY doesn't matter, it's just slightly different arrangements of names on a sheet except for the whole 'History is a core course') for mundane stuff if asked.
But seriously, this is an American school, suddenly UK classes would not fly with the Department of Education or any local school board with oversight.  Then again, this is a private school, but I think the curriculum needs to meet certain criteria for it to be a properly accredited school in the US.
Alternatively, suddenly we're in the UK, but seriously, this is rather awkward to justify ICly.
Oh, and teachers coming from other countries...Has absolutely no bearing on the curriculum?

But seriously, there's no need to get DEEP into the details of American education.
Something like

Foreign Language (2+ years) (Either Spanish, French, or German)
Phys. Ed. (Means Sport)

Elective:

Music (which might meet outside of the school day)
Programming
Additional Science (that isn't biology/chemistry/physics)

And then people subdivide a bit as needed.

"Health" (Which would be GCSE Phys Ed?) courses are generally conflated with P.E.
