Am I doing something wrong with butchery?

I'm a very new player, just started my first fort last night. 
I've been using that 'Getting Started with Dwarf Fortress' book, and it's been very helpful, but there's something I'm unsure about.
I set up a Kitchen and a Butcher's shop, along with food and animal stockpiles (from what I can figure, the animal stockpile is for storing whole animals, rather than bits of ones, but it couldn't hurt), but whenever I order an animal to be slaughtered, they take it to the Butcher's to be slaughtered, then just schlep the remains straight outside to the refuse pile...
Is this the intended behavior?  Or have I set something up wrong?

Oh man I'm an idiot!
I just took a closer look, and it's just the bones going to the refuse pile, seems they are storing the meat all nice and tidy, whoops!

Hehe. Welcome to DF. Things are pretty confusing at first, but with time and patience you'll find much enjoyment in this game. Wiki is your friend, also: http://dwarffortresswiki.org/index.php/Main_Page. There's a starter guide in there, too.

And if you look again, you'll probably find that raw hides and wool gets thrown into the refuse pile as well (together with bone/horn/ivory). This is not a major problem since dorfs with the appropriate labors will pick stuff from the refuse stockpile just fine (although I usually have a raw hides only stockpile around my tanner).
