What exactly are those <extra> dwarves useful for?

I assign everyone who couldn't be bothered to learn a skilled labor all the unskilled labor. Then, when I need some plants brewed or plants processed or cheese made, I'm never short of labor. If my fort lacks a skilled labor and is reasonably populous, I choose a young peasant to start learning the art of dyeing or weaving or bonecarving or whatever, and after a while they skill up enough that they become respected members of the fort. This way, aol the no-skill labors are well-covered, and there's only a brief period in any industry when its craftsdwarves are churning out sub-exceptional works (my dorfs value craftsdwarfship).

The dwarves that have useless jobs to me are usually having their labor changed depending if i am missing a worker on specific task or most of the time are my military recruits.
In a couple of years of training they can become good enough warriors.

Extra dwarves with no important (i.e. Smithing) skills are crossbow recruits. We will achieve enough dakka.

no, seriously, I had an FB which was a giant crocodile dinosaur with deadly spittle, and it was killed by a ton of laborers punching it.

Not sure if dying of old age is an honor or a shame for weaponmasters. On the one hand, it means they never got the opportunity to die in glorious battle. On the other hand, it means nothing could beat them in glorious battle.

The vast majority of mine become farmers. About 10% of the 'extra' dwarves become miners. Two or three become strand extractors. A few might become furnace operators. Assuming we have an infinite supply of fuel, and a decent supply of cloth bags and sand, some are bound to become glassmakers for life.
