Greatly overestimated the protectiveness of my shiny new helmet and breastplate, and was shot off my horse dead as a doornail by Swedish marksmen before anyone else had a chance to happen.

Mount and Blade: With Fire and Sword.
I didn't know that nuCOM 2 was a crossover. Or that early access was out.  :P

New class confirmed: Swedish Marksman.

You should really look to the wilderness for your stealth ideas, it has been doing it much longer than you have after all. Take squids for example, that ink trick works pretty well, and in water too! So you just sneak into the dam upsteam, dump several megatons of distressed squid into it, then break the dam. Boom, you suddenly have enough water-proof stealth for a whole city!

I didn't realize XCOM was set back that far after being defeated.

I would so be down for launching a massive cavalry charge on a downed UFO.  Aliens have to reload eventually.

"If soldiers can fire whenever the damn they want then the entire line will descend into chaos! Drills and drums lads, drills and drums."

I would like to see a game about an alien invasion during Napoleonic era. Using cannons to blow up tripods would be an interesting angle. Nobility and kingdoms signing pacts with aliens in return for technology.

That's why you send the infantry in first, then follow up with a cavalry charge.

Any of the infantry survive, they get promoted from rookie to squaddie and are awarded a class and a class-colored horse.

But if a cavalry soldier gets promoted he can get the couched lance ability, giving you a massive damage bonus and chance to hit bonus, and he has the speed to actually use it.  For infantry you get a choice between a larger shield or a bigger sword, and both those choices are shit because they are so slow they will just get riddled with plasma either way.  Sure you can clear out the inside of a UFO with them, but if you besiege it with enough catapults and ballista then you will still get it in a couple of months anyways, so what is the point?

I sometimes really wonder why X-com has to exist at all, considering that every alien landing in the game could reasonably be dealt with by a single mechanised platoon + heavy support from the target country. Is there a tonne of off-camera invading we're never shown which occupies the hundreds of thousands of soldiers in the world? Or are they also on vacation in the bahamas with the Commander?

I mean, imagine running the temple ship mission with a hundred plus rookies/tier 1 specialists and one psionic.

Well, one level shows multiple tanks which have all been absolutely annihilated by plasma.  Plus, how well can you respond with a mechanized platoon?  Most abductions will be gone in hours.  Then, if you consider that your shit rookies are still considered to be the best of the best, imagine how horrible your regular soldiers will be, even the elite soldiers.  30 base aim?  Sectoids would have heavier firepower, would have more health, and be more accurate then even most elite soldiers.
