I may not be the most dedicated player of the bunch, but I can say I know a bit a bout orcs.
Actually, I know a bit about them because I am not the most dedicated player. I love orcs, they are so easy to master, are far less bug prone, and as long as there are living things on the area you settled in, you will not be running out of weapon grade metal.
The trick is to embark with a decent spearorc (though other weapon choices may be effective, depending on the castes you get) with some basic gear (i usually go with bronze spear, chain mail shirt, and mask. The other gaps may be closed by a lamellar armor) and start hunting. Use the bones to make blocks and walls, and some bare-bones (wordplay) quarters for your population after your boneworker is experient enough, and as soon as you feel safe enough, stat working on lamellar, ironbone, and bloodsteel.
If you got a artisan at embark, or a very good weapon/armor maker immigrant, set the shop and start working the steel.
If you didn't, put your best leatherworker to crank up lamellar. If I remember correctly, he can make weapons with the Leatherworking skill, rather than metalworking, and as all orcs are good potential leatherworkers, thats a very easy way to at least get nice weapons.
