No, his name is Edem. I know this because after playing Bastiongate for 24 years, it's hard not to memorize dwarves' names.

I always read that name as Edam, which given Dwarves pre-disposition to both make and engrave cheese would explain this...

...right I just did some poking around, if you want (along with other things) a Dwarf to be called Cheese, or Shokmug as they call it, simply change:
[CULL_SYMBOL:ALL:DOMESTIC]
to
[SELECT_SYMBOL:REMAINING:DOMESTIC]
in the entity_default for Dwarves. This will also possibly lead to Forts being called Thimblebunny the Cheese of Desks, but hey: you'll get Dwarves called Cheese.
