Is there a simple way to reduce the effectiveness of poultry and other egg layers? Perhaps by changing incubation time or number of eggs?

Can't change incubation time, but you can reduce their output.

It's a tag called CLUTCH_SIZE. For example, turkeys have this: [CLUTCH_SIZE:10:14]

The first number is the minimum number of eggs, and the second is the maximum, so turkeys can lay between ten and fourteen.

If I recall properly you can indirectly change incubation time, since it's dependent on the size of the eggs. At least, as I remember it anyway.

That's been disproven a while ago, so unless it's been changed, it is always three months of incubation.

You could also make the animals themselves smaller so you get less meat from butchering them, but you're talking egg layers specifically so I'm guessing your problem is with the eggs, and most egg layers are really small anyway.
