I went for it but my sword could barely hurt it, basically only its legs and tail and I have to stab because if I clip the wing it'll bounce.  I'm coming back with bombs later, I've heard he's easier to hurt if you can crack the rock.

You don't need to. Just whack his legs / tail a bit and mount once or twice. He dies super fast.

Also when your weapons bounce you still do damage. You lose a bit of damage and sharpness decreases twice as fast but it will still get hurt.

Or you could use something like a charge blade because it can ignore armour.

You can also use Switch Axe's sword mode for ESP (Mind's Eye) and I think Greatsword may also has ESP..? The vertical swings of those weapons may also be less likely to clip the wings if you angle it straight on from his neck to this chest.

EDIT: How hard are Commendation G's to come by? I've been doing some of the 10 star caravan quests and they've been handing them out like candy, at least one per hunt.

The greatsword has minds eye for a fully charged attack. Or maybe a partly charged one too, but not charging at all bounces.

What's the general progression of everybody?  I'd like to join some people to hun the mons, but I'm not sure if I'm too low for it or not currently (just hit high rank in the village, haven't done any online yet).

Ever since I hit high rank in the village, I've been finishing the low rank quests up. At the tail end of HR 3 for the guild hall quests, soon to enter high rank. You end up missing a suprising amount of things if you focus on just the key quests I found.
