I do think fortress would be great. It's literally a tank Pokemon

I agree, while my experience with Forretress is in a fangame, it was one on the harder end of the spectrum, and that tank saved my team from so god damn many total party kills. (And not in the 'hold on for as long as you can while I heal everyone else' method)
When everyone else fails, Forretress doesn't. (Also, no weaknesses other than fire, and Sturdy guarantees one turn. Either way, pile on the Iron Defenses and just about any physical move will just bounce off the armor!)

This was amusing to read. Can't say the same about my attempt at an extreme randomized gen 5 run, I decided to stop it after murdering nearly all my encounters with the only two surviving porkyman I have. A freaking steel/electric Regigigas and a dragon-type Rhydon, so yeah kinda difficult to not OHKO wild porkyman.

So I've been presented with the choice of using Storm Silver, a hack for SS as alternative to avoid many annoyances (especially related to HMs), change some things and add more story. Would you people be fine with it instead of the original games?

That depends, will it make the game more fun for you? If yes, then yes.

It makes changes I like to both pokemons (Farfetch'd is useful!) and other stuff (HM moves are also useful!) so yes.

I'm personally not too keen on rom hacks if it does drastic changes. It's why I never got into uranium.

If it'll be more fun and interesting, sure. But I don't see why farfetch'd matters since you weren't thinking on it. And most of the HMs you use in Silver are solid (except cut and rock smash. Rock smash isn mandatory though if I recall)

I'm also only rolling with normal soul silver so I can play along

Uranium isn't a rom hack, it is own game. So yeah, it is supposed to be different; as in a different Region and all that stuff. Just like Pokemon Sage, Insurgence and some others that are in progress.

I think I heard about Storm Silver, isn't it that romhack buffing some base stats and making some pokemon viable? Like Ariados base speed going up to 80?

Yeah it's essentially the same as Silver but changes some pokemon stats and moves around, adds a few extra events and I think the most important part, lets you get all pokemons in one game.
