So.. I had a few war dogs on my embark while I got my fort started in order to help protect from any animals in the early game.  They started picking on some horses and I almost lost one.  So I hurried up and got one dwarf hooked up with some iron armor and had him our chasing off the buggers.  Well.. a hunter decided to help by filling one of them full of arrows but could not finish it off.  I then had my trusty axe dorf walk up and behead the foul beast.  Then..as I blinked in confusion, he threw off all of his armor and made a bee line for the fortress where he upgraded his canteen of all things and then went back to put his armor back on.  I can only imagine that he was hot in all his armor and just could not stand another minute in all that iron. I gave him a kill command while heading back (since he still had his axe) and sure enough, he ignored the armor to go whack another horse a few times.

was he on Inactive Duty? did you have him set to ear armor while off duty? if they are on inactive duty, or if you schedule them to have no orders some months, they will go civilian, and if they are not ordered to wear their armor as civilians, when the kill order is completed and they go civvie, they drop their stuff.

Sounds like he has woodcutting enabled. Woodcutting, hunting, and mining have an "invisible uniform" that conflicts with military uniforms. Disable his woodcutting labor if you want him to stay equipped with his military uniform.
