So, when you retire a fortress, then can you go back to it and just pick up where you left off? Obviously there's a little time change but actual architecture and whatnot doesn't change does it?

I have yet too see the architecture change, but if your fort has been retired for a while it may end up taken over by another civ or worse, if on a volcano embark, the volcano may overflow and flood the world. (Map, but still, that's quite something.)

i'm pretty sure the answer is no it does not change, but that is a planned feature for the future (the idea is to have a site have a mix of whatever civilization's styles it has been owned by)

If you breach an aquifer, or have a seaside fortress, often the levels below are flooded partially or all the way too.

Often, if a place gets taken over by goblins, I've seen it gain some gob towers and those weird trenches.  It'll be interesting to see what the humans do with the goblin sites they've conquered.

It certainly makes things interesting.  Lots of my "bridge fortresses" end up with the tunnels below it flooded.  It becomes an "underwater spelunking" challenge for necros or other other undead types who don't have to breathe.  I've often thought it would be cool to create a seashore embark with towers that rise out of a big channeled out area, so that I can create a "sunken city" type of place for adventurers to explore.

Not sure if he can swim, but otherwise he'd make a fine addition to any of our clans.  Just hope he's not some sort of glass cannon, right?
