You might have to keep them sane. I'm not sure.
I've noticed that keeping were-infected dwarves sane isn't hard. At least, if there are only a few. I don't know exactly how hard it is if a significant percentage of your fort is infected.
It helps that transforming removes hunger and thirst.

It's been a long-standing tradition. I do not know if a berserk one counts, but given that transformed werecreatures do, I believe that they do.

There's still worn clothing and nudity thoughts. I don't know enough about the new emotions to guess what might send one over the edge. Vengeful thoughts due to wildlife are avoided thanks to being locked up. Strange mood is a possible danger. Workshop destroyed probably equals instant insanity. No idea what happens if the dwarf transforms while waiting on a mood.
