It sounds fine. You're welcome to use the spell-less Ranger variant, or the revised Ranger. As a note, multiclassing is a bit different in 5e, and you should read it over. But, basically, it's pretty similar. You will need, however, 13 STR, DEX and WIS, at least, to multiclass. Also, your proficiencies are different, based on which class you multiclass into later.

This. So much this. 5e was made with a very different mindset than 3.5e, so don't try and play it like 3.5e.
And What LvL Would I Start at?
The party is at fourth level. Level 5 is still a long ways away. They need to basically double their current XP totals.

@Myname: Btw, what are the limits of the phantasmal force spell, exactly?

From what I have read, it's a "save or suck" spell-if you fail the initial save you take a little bit of damage as long as you keep interacting with it and remain in the area-you actually have to stop, and examine the thing closely (While suspecting it IS an illusion) to determine it is an illusion with another INT check.

Are my assumptions mostly right? Or does he get a save every turn no matter what?

I compare this to a Hold Person spell-same duration, and save every turn, but the affected character is Paralyzed-gets disadvantage on attacks+auto critted by every attack that hits. Which is pretty much instant death...

Wheras my illusion would be sort of ruined if Arwen charged in and started meleeing through the fire and didn't give me time to adjust the spell to include him. Also, the guy could (and probably will) jump out of the fire at some point.

...

Inb4 GM begins to use illusion spells on the players...

The way I'm running it is thusly:
He is interacting with the illusion every turn. This, I felt, granted him a chance to realize that it's illusionary. I should probably be rolling the check at Disadvantage, however. I will correct this in the future.
If he stopped, and actually inspected the illusion, he'd roll normally.
He won't jump out of the fire, because of the excellent description you provided.

Fair enough. It's the sort of spell that I'd imagine is difficult to balance-taking someone out of battle for a minute with no defense would be too powerful. I suppose it's a fair price for the limits of my imagination, tho Hold Person is now better in every way mechanically.
