Lumber is now a plentiful resource, go wild!

Seriously, you'll be looking for applications for the huge piles of logs you end up with after clearing fortress space in a forest. starting with a proficient carpenter is a good idea. You might want to spare some favorite trees from cutting, though, since fruit are useful - some have different applications; you can make booze from most fruit like plums and apples but press jugs of oil from olives instead, in addition to cooking them or eating them raw.

Copper for the craftsman, cunning at his trade.
‘Good!’ said the Baron, sitting in his hall,
‘But iron– cold iron– is ruler of them all’.

stuff for taking out the oversaturation of wood:

1. use it as fuel

2. make furniture out of it

3. ammo for hunters/soldiers

4. crafts

5. nestboxes

6. hives

7. training weapons/shields

8. armor (?)

10. ramps or structures for no flamable locations

11. bins, barrels

12. caskets

there are many ways to spend that wood, the problem is that just cutting 4 or 5 trees you get enough wood for a long time.

You can gather fruit by assigning an activity zone (containing the fruit-bearing trees) to Plant Collection. This also automates any plant-gathering jobs for shrubs that grow on the ground. You can make a stepladder out of wood, which will permit your herbalists to just climb up the trees and pluck the fruits for other dwarves to haul away.
