So my world had only 40 dwarves, and no dwarf civ left. So I wanted to make like a last dwarf stronghold left, so when I started getting migrants, I though "dwarves have heard that a stronghold named ironhelm has become the last dwarf settlement, and dwarfs far and wide (all 40 of them) might migrate to me... but when I have over 130?" 40> 130?

And of course I get caravans from my capital... which is controlled by elves (filthy wreches) I get dwarf meechants and dwof items... so I would like to know the process of this. Are caravand and migrants generated?

They are not generated (with exception first 7 who are spawned from air). From 40... my fortress fallen because old age. :| I wish you luck.

In my fortress dwarves are dying from old age.
Dwarven wine is a little bit like good chicken soup:  solid at room temperature.

Got the same thing going down. My current world is populated entirely by immortals (goblins and elves), save for three humans.
Started a new human fortress, and got my hardcoded 2 migrant waves. Then a third one, consisting of three. Assumed that would be the end of it.
Gotten another 29 migrants since then, and two human caravans.
Looking through legends, I assumed this was because we had a live elven king who'd been in hiding with a bandit gang for 200 years, but I guess civs just don't die properly anymore?

You can check their backgrounds.
But then there's another question: where did you start seven come frm?

Edit*

It seems, your own civ never die. I've checked that in legends mode, despite hundreds years of empty, everything seems normal.
