Test his defenses at first.  If he proves able to counter our feints...

Well, why not use Bearsong's tactic?  Try to tackle this guy to the ground and get him while he's down.  It worked for at least one hit against us.

It's too hard to say which of us will run out of stamina first.  This needs to end quickly.

Press the attack.  Tackle him and finish him while he's down and trying to recover.

This is reasonable! Also, we have more than just a sword, we have a fist too. If we can off balance him with a punch/shove/pull with our free-ish hand, go for it. Learn from our fight with the veteran at the garrison.

We do have to finish this quickly.

I've seen knight-fights. They grapple and trip and all sorts of nasty tricks (hell, even saw a flying knee to the helmet, which was quite impressive. The point is, there aren't really dishonourable tactics in single combat.
