Elven caravans no longer sell logs?

I recall they used to bring some logs with them.
But I haven't seen they doing that for a long while.

They definitely will bring logs if your fortress is really low on them, but the threshold on that is clearly much lower now. Depending on caravans for all of your wood is a dicier situation, but if you want to maximize what they bring, use up all your wood in the spring.

Just forbid all your wood.  The same trick works to force a caravan to bring more cloth/food/leather.  At the start of the season simply forbid all your wood stores until the caravan appears, then reclaim them.

The threshold for wood brought by caravans was and is your exact headcount - i.e. if you have 60 beards and 36 logs, a caravan will bring 24 logs; if you have 60 or more, they won't bring any wood (unless they're the dwarven caravan and you explicitly ordered wood). As far as can tell, this mechanic is exactly the same in recent releases, with the more bountiful trees it's just more likely that you have enough wood lying around to go over the limit.

There's a post floating around... somewhere... that had the "emergency" supply calculation in it.  I believe it was Quietust who deciphered all of that by disassembling the game.  Try as I might, I am currently unable to find the post.

Perhaps.

My fort has only 7 dorfs (I use population caps). I have a lot of logs and cloth/leather.

I noticed the caravans always bring LOTS of ropes and some clothes/threads, but they no longer bring cloth and leather bins with them.

I know if you buy and hold onto enough ropes, you'll stop seeing those in the caravan as well.
