Well for just variety without going into a whole tea preparation, I'd recommend fresh tea kombucha (raw leaves) and lapsang kombucha (smoked leaves). You could make the smoked leaves at a wood furnace or kitchen or something.

I'm trying to keep the process from plant to still directly, as opposed to implementing new ways of brewing at all.

Basically a larger variety of options for alcohol without any more steps.

You can't do white and black tea without adding processing. You could do young and mature tea, though, by adding a "buds" growth to the tea tree. Tea made with buds is much higher-value than tea made with mature leaves, and doesn't get bitter.

Actually, I made a thread a bit earlier trying to get help with specifics on just that. I am wondering how to add in flowers to the tea when harvested where you get flowers and the plant itself...
