Birds don't seem to be geldable. At least geese aren't. I haven't tested any others, but I would assume it extends to all egg layers.

I updated my copy of Phoebus which required changing all the raw files. I used a utility so it was pretty easy, but I still saw all the animals that are geldable. Pretty much just mammals with the exception of platypuses, echidna, and kobolds.

I saw the mention of capons on wikipedia, but I didn't have much information on birds so I just left them off.  I still don't know much about how practical or period it is, though it's referred to as an old thing, or how much it extends to the other birds...  or alligator pets and so on.

Caponised roosters are definitely documented to before 1600, Your Grace. Apparently it's not a difficult operation, if you know what to look for. I agree that a rooster doesn't have any obvious external genitalia, but I assume that's mostly due to feathers, which hide a multitude of sins. In the modern world, we tend to chemically caponise roosters, which is why blokes who eat enough of the cheaper chicken on the market get a bit much Estrogen. There are farmers out there who do use the old method of caponising a rooster, and having eaten such, I can attest to the bird being larger, fatter, and more tasty than his ballsy brothers. He also grew slightly more slowly. I presume it was due to a low level of testosterone.

As for breeding, I don't think there's been any science done it yet.

Gelding is under farmer labors.

I'm excited about this but I am waiting for dfhack and therapist to be available.

I'll be happy to not have to periodically wipe my dwarves' unhappiness also, since nothing makes them happy again in the version I am using.

As a fan of keeping a healthy meat and leather industry I approve of gelding.  Keeping track of gelded animals would be like trying to chain a specific animal or keep them seperated by some abstract system.  Which is to say via memory based on their order listed.

I do want better animal sorting.  Perhaps a customizable 'profession' for them?

Depends on how exactly you plan to sort them. The gender icon is changed to the 'somewhat damaged' designation (heh heh), so it makes pasturing a breeze if you want to keep female livestock with only gelded males.
