Do dwarves become infected/cursed by werebeasts when they are bitten by then or just as soon as they are attacked?

Just a note in case it helps you. Don't lock infected dwarves in their room hoping to starve them to death, it won't work as the hunger/thirst will continuously reset, and also they'll eventually tantrum and bust out locked door and cause mayhem. I learned this the hard way early on in my fortress!
The accursed were drafted in a 'Death Row' squad and sent to a danger room with real weapons while wearing no armour. They were given no ceremony before the iron spears tore through their heretical flesh. Problem solved.
It's probably better to quarantine them in bridge-sealed (separate) rooms and see if they turn or not. For style points, add a chain in the quarantine rooms.

I recall the same, bites, or anything, that don't pierce the skin don't transfer the curse, so it's a bit like a poison bite that needs to inject the venom into the bloodstream. Has anyone seen a were-cobra yet?
Is that even a thing, given the lack of limbs?

I've been a were-gilla monster before in adventure mode, and you can inject venom. I didn't do any SCIEŃCE on whether or not the injections were related.

no clue, what are the conditions on what can and can't be the beast form of a were-beast? I think gila monsters actually do have venom though, would have to check creature raws though

I don't think anybody's actually done any SCIEŃCE on it yet, but I've never heard of a werebeast from a creature that couldn't grasp. In addition, no birds, fish, or insects. Only mammals, reptiles, and amphibians. (Not counting were wagons because they're not vanilla.)

They do, and so does the werebeast form. I just don't know if a venom injection always corresponds to a curse injection.

I bricked them up first to make sure that they were infected. They were, but I couldn't get the execution room ready in time so I ordered the accursed to the edge of the map so they didn't attack my dwarves.
