Sims don't have gender preferences unless they've actually flirted with someone. They have a sliding scale from -100 to 100, and as you flirt with people, it moves the slider one way or the other. So, if you want a sim to exclusively like females, have them flirt with girls extensively. Or cheat, but that's a whole 'nother sordid affair.
