So I think if this current god dies I want to make a god of winds and have him make the owl guardians sentient worshipers and convert the Sewa, also make the planet's natural bird population sentient worshipers.

Yup. Grauel was originally just god of Hunger but took on Decay later. Same with Darruth who later took on Protection in response to Fusil and Khaziraad so he wouldn't have to pay as much Essence to make some roads, though he didn't really do anything with Advancement after that.
