the revelation, to me, is that water will travel diagonally through different z levels.
Not quite sure how you reached that conclusion, since it doesn't...

It's amazing how dwarves can make a stack of bones completely waterproof and magmaproof.
It's amazing how they can make an entire floodgate out of the bones of 2 cats.

:/  And I was planning new water channel designs in my head too.  Not sure where I got hung up, my apologies.

To clarify, liquids can move in exactly 10 directions: north, south, east, west, northeast, northwest, southeast, southwest, up, and down (with the restriction that upward movement can only take place when pressure is at work).

The only things that can move both vertically and laterally at the same time are creatures, and they can only do it if either the vertical and lateral movements can be performed separately (as with traversing ramps) OR if they are flying/swimming and the upper tile contains a downward staircase (as described earlier in this topic).

Yes, but it will reset pressure.
There is no such thing as "resetting pressure", since pressure is not a persistent property of liquids in Dwarf Fortress.

Water cannot pressure-path diagonally, but it can still spread out diagonally.

So that obscure diagnal movement will actually secure an open river source without added materials?
I wouldn't call it "obscure" - people have been using diagonal gaps to block water pressure for many years.

"Reset pressure" is what it does, in terms of its practical effect: it turns water going in that may be able to path to a higher level to water that cannot pressure path above the current level. What's actually happening in the background isn't particularly important: the relevant fact here is "diagonal pathing on lower levels stops flooding problems".
