If you are in melee range, you can press "," to advance time slowly until they begin an attack, then Shift+A to open the action menu from which you can manually dodge, block, or parry the attack. You can also use this technique to carefully time your attacks to happen when your opponent is recovering from a previous action (and thus at a disadvantage). Also, jumping can help get you our of attack range more quickly, as can running or sprinting (though at the expense of fatigue and the extreme risk of becoming Tired and thus slower than usual).

I didn't know that doing that was even a option. I will need to give that a try next time I fight something.

These two, yes!
Firstly, it's probably best when facing a enemy that is faster then you to wait for them to come to you, as if you walk up to them, you'll probably get punched right as you step onto the tile next to them. If you simply stand still, you can wait until they get right next to you, and you'll be able to attack first, or at least you'll be able to START your attack first (the bastards are so fast that even when you use a "quick" attack, they'll sometimes manage to start and finish your attack before your first attack finishes.). If your feeling REALLY lucky, and there's only one bogeyman within a two tile radius from you, you can probably try a second "quick" attack, but normally what you want to do is do a jump away from them, and wait until they run up to you and repeat the process.

From what i've seen, bogeymen get an average of 2-3 attacks in throughout the period of a single quick attack if you have superior strength and agility.
