The only possible way to stabilize him is to have him eat the heart. And even then it won't totally repair the stat damage. It will just keep him alive and heal him partially.
Wait, so he'll be alive but with 1s in everything? Or even 0 if he gets a bad mutation?
Crippling and fatal injuries give permanent stat losses. If the heart heals him, which isn't a sure thing, it depends on rolls on how much he'll heal back to his starting stats. I don't know how much of his stats he would regain, is the deal. If he heals at all.

Meat is for eating while moving and is useless to you right now. The other things can be used to make weapons, shields and armor. The feathered pelt can be made into a feathered cloak which is armor, not terribly strong but better then nothing. The beak can be made into a weapon, the shoulder blades into shields and the bones into more general items, like Javelins or armor plating for clothing. Heavy armor reduces sinew, by the way, slows you down and makes your movements less precise.
Now, who gets what and who gets the heart and what do they do with it?
