"I can hunt pretty well. Maybe 2 weeks, see if we can pick up work in one of the towns or villages along the way, hunt for what we can as well? 6 Weeks of food is hard to keep from going bad no matter what it is too."

According to the map, that area is complete wilderness: It hasn't been settled by any civilized race for a couple hundred years. The good news is that rations actually keep quite well, as long as you keep them dry.

"...On second thought, we may want to see if we can earn some coin first, or maybe find a caravan heading that direction and sign up as guards."

I think you've got the math for rations wrong. According to DF1, a single meal of rations is $2, so to cover the entire trip would be $80 per person.
Also, the cost of living in town is $150, unless you want to live in style.

edit- sorry, there are three meals per day, so thats 240 per person. Whoops.

That's accurate for most campaigns. DF uses some different rules though, so it has different numbers for a lot of things.

Rachel downs her drink, wishes her new companions a good night and rents a room. In the morning, she tries to find a vendor who sells trail rations.

You find yourself at the general store. Well stocked shelves gleam with ropes, poles, tents, and all manner of adventuring gear. An entire section displays preserved rations available in bulk.

Find the shopkeeper.
"Hello! I'm looking to buy some rations for me and my companions for a 40 trip. Do you have a bulk discount?"
((How should I declare that I'm using the Merchant skill here?))

Aye, ye can get a 10% discount for purchases of a hundred or more. How many ye want?

((The parentheses are fine.))

"There are five of us, so... 600. What would you say to a 20% discount for this order?"
((Disregard the second sentence if the 10% represents my success with Merchant.))

"That's pushin et, me laddie. Ye cen get 10% an no more. That'll be $1080."
((That was indeed your success with Merchant. Also: Hilariously bad Irish accent is hilariously bad. Also also, you don't necessarily need that many. If you can fail (Not crit fail) fishing, naturalist, or survival, you can get 1/3 off the number of rations you (whoever rolled the skill) need. if you sicceed you get half off, and if you crit succeed you eliminate such requirements entirely.))
