Alternatively, we could eat him.

How about no.

Yes, lets refrain from cannibalism, that is generally frowned upon.

Ah, but it also does a wonderful job of hiding the evidence. And if you start with the brain, them possibly being a manipulator isn't a concern! Plus, being a Shifter we don't exactly have to worry about prion diseases.
I mean, we obviously shouldn't do it to everyone, but as self defense against a murderer? Worth considering.

Our character isn't a psychopath, nothing about this idea coincides with our character.

Gee, I wonder where we could get some of those.

... We aren't eating people. That's something I wasn't expecting to have to say in this thread.

The only time I will condone eating someone is if we absolutely need to for self defense.

I did say that it should be kept for situations like self defence against clearly... evil, for lack of a better term... threats.

Exactly, or as a last resort.

Flee, screaming.
You are about to turn heel and run like hell. Who knows what a murderous psychopath like him is going to do to you? But...

Wave at him first. Maybe he's not so bad? Try to spin it so it seems like you knew he would get away, and you were actually trying to distract the guard for him.
You realize that doing that would be exactly the wrong thing to do. He might not want to kill you. You give a cautious wave. He tilts his head at you for a few seconds, and your stomach drops. He waves. You feel like you're on steadier ground. "Th-the guard's gone, I think. He'll be away for a while." He seems to lose a certain tension. He's breathing a lot slower now and has a more relaxed position. You still get the distinct impression of being around someone who is seriously anti-social, but the bloodstains and the multiple weaponry and the deer mask with hollow eyes are probably adding to that effect.

I feel like we should just be bubbly and friendly, we don't need to explain ourselves, if he asks tell him we were scared, but then realized that he's a person too, and should be treated as such, lets try to get some morals up in here.
"You know, I was scared when I saw you, I thought you were going to hurt me. But I was just panicking, that's why I ran. You wouldn't hurt me, would you?"

He seems to turn it over in his head for a few seconds. Finally, he shakes his head.

Smile at him!
And now, it's time for someone that can have good ideas.

Smile, then ask if he can talk.

It seems I was right about him not knowing of us. This is good, but we should be careful not to let anything slip.
