But for posterity: Those I've made as haulers are practical experts in their fields, but have dual-roles (or said field has just too much of said service that it is generally unneeded at the moment, like cooking I mean goodness all dat food.)
For underdeveloped dwarves...I've given a special field for them to work with.

Toaster is Miner Foreman. Master of the pick, and leader of the mining squad (I now wonder why Webadict ALSO has mining skills when you're like a living drill...)
Org? Healing well. Our only doctor now has his own dig to...err, dig in.

Seriously guys, when I say 2 z-layers under well for no muddy water, I mean 2 z-layers of water so no muddy water.
People complained about it!
So I made a better well.
Also we lack enough losses that things are going peachy!
