Side note-ish question: if I put a floor over an outdoor pasture will my outdoor garden and grass still grow?

Yes, assuming the floor is over (as in acting as a ceiling) the pasture.

Can an inorganic material be modded to be edible without requiring any type of custom reaction? If I wanted to play as a Golem race could rocks be edible? And for the cheese fortress can the layer cheese be eaten by dorfs...?

Closest I've been to an entirely above-ground fortress was this old thing, about 85% of which was in structures that were either built above ground or carved out of that rediculous mountain (if not both). Took about forty game years from embark to finish (including 90% of my population dying off on two seperate occasions in the interim) and I'm not terribly keen on doing it again.

There's 3D visualizer programs that convert your fortress into a 3D model you can fly around at. That fortress was way back in 40d (I think I uploaded everything to the map archive a few days before the big 2010 release) and the one I used back then won't be around anymore, so you'd have to look around for one to find one for the current version -- if such a thing even exists. You might be stuck with Stonesense, which isn't really good for photography last I checked (which I haven't done in years).
