We are currently three turns in, and the main hall is coated in blood, intestines and random corpses. There's a huge pile of 3000 items made of human body parts in a corner and remaining members of the staff of the museum are, as I type this, being slowly choked to death by one of our adventurers.

Tyromancer.  It is actually a real practice, though it just means divining from the coagulation of cheese.

Of course, necromancy is itself a bit of a misnomer as it is (it should just be divination from the dead) so you would probably prefer tyrourge or tyrokinesis.

Tyromancy sounds cool though.

The best word I could think of is "Lactomancy", but that's just milk, not full-blown cheese.  And it's not even a real thing!  I think.

I don't see the benefit of saying it in latin. Necrocheeser is pretty self-defining even if you've never heard the word before.

Now I want to make an actual tyromancy option for Masterwork.  Or just an 'anything golem' magic workshop that includes cheese as a valid material.  The construct-creature script allows stuff like that.  But that's up to Meph, of course.

Cheese Wizard could mean any sort of magic to do with cheese. Necrocheeser means raising cheeses from the dead to be your servants.
