As far as my own dwarfing music, I usually listen to this:

If that's done by somebody other than the official DF musician, that's even more impressive. Captures the feeling perfectly.

And as far as stealing music from other games goes, the soundtrack from Fate also ties in rather well (depending on what z-level of the map you're working with at the moment):

Manowar, you just can't go wrong with some good ol' butt-metal to accompany your dwarves. Where every song title sounds like just another day in DF. Violence and Bloodshed, Hail and Kill, This Is a Good Day to Die, Black Wind, Fire and Steel, Fighting the World...

I either listen to the great soundsense soundtrack or German Medieval/Folk Metal bands since nothing is more fitting for my drunken Dwarfs than bagpipes and "heavy metal thunder".

I highly recommend bands like Subway to Sally1, In Extremo2, Saltatio Mortis3, Corvis Corax4, Tanzwut5 and many more.

The Mantle was the first album of theirs that I heard. It's fantastic, but all of their stuff is. I listen to it when doing everything from playing Dwarf fortress and Kerbal Space Program, to sorting boxes of coins. They go with everything.

+1 Especially when it's legendary dwarves fighting FB's or any other combination of units that move very quickly. Bonus points for them being on fire, trailing blood (or rot-induced miasma), and for dodging into magma.
