Engineer the sewers in a maze-like fashion.
Engineer it in a way where you can dump water there, service parts of it, supply fresh water from it to the fortress.
Then put him there and from time to time cast prisoners there too.
Let them live in down below, in the underground. Together with rats.

Throw him into a 3 Z-level-high Shaft of Enlightenment with 10 wooden training spears on a wooden floor, cage him, rinse and repeat. Once you've repeated the cycle six to twelve times, relieve him of his weapon(but not his shield) and pit him up against all of your useless dwarves recruited into wrestler squads.
By the time they're done with him, you'll either have several squads of highly skilled wrestlers or several dozen dead cheesemakers.

Enlighten him, keep him armed, and chain him just in vision range of your depot, so he can't easily spook the merchants but attracts the attention of caravan guards. Guards will rush over to fight chained prisoners, who usually get loose in the process, so you'll need to plug any escape paths with cage traps. If you set it up right, you'll get to harvest a good amount of guard equipment (humanite? dwarfenite?) every year.

Never thought to do that with captured people.

Usually, after I get enough prisoners, I'll build a small prison camp as part of my fort. Throw in some food every now and then. And occasionally open the gate and send in squads of recruits to train.

Have 1 fort though where I'm building a gateway to hell, and have been filling it with the capturees from 4 goblin seiges. And when the time comes, they're going to be the first line against the clowns. Though, they may just team up against me, and well then I'll just begin the ballista bombardment.

Allow him to gloriously lead the charge against the <insert deadly foe here>. And by lead the charge, I mean be the only one charging.

Or, you could train him to legendary wrestling, and then try and get him to wrestle away adamantine stuff from some recruits. He would then be actually effective when you send him to charge against the deadly foe.

Do you have a dungeon? If not, build a dungeon.

You can chain up prisoners and forget about them. That's what I've taken to doing. Neglect is sometimes the greatest of punishments (I once had a necromancer king who ambushed my fort. My dorfs would not throw him into the magma pool, so I chained him up. After I abandoned the fort and looked at the Legends file, he died of starvation along with the other chained slags.)

Put him in an artifact cage and then put it in your dining room.  Always a classic.

I'd have to go with chains or cage myself. Hell I'd build a dungeon for that express purpose.
