Tantrums and Fey moods

So right now, my fortress is in the midst of a tantrum spiral. This sounds fun, but it isn't. None of my dwarf are trained in any combat, so this is just a long ans slow punch fest, one that makes the  "dwarf A cancels stockpile because of angry dwarf" message constantly flash across the screen. But that is not my question.

My question involves how this started. One of my dwarfs, (he some kind of farmer dwarf, i think something like grower?) struck a fey mood. he then went to the meeting hall and stood there, not demanding anything or doing anything, for about 10-20 minutes. Well I didn't know what to do, so I made him carpenter and hoped he would scurry off and do something. No dice. He went mad, and started beating up every one. I think. He then was mobbed and died, but not before killing 5-7 other dwarfs and a hand full of critters. Now my entire base is in a tantrum shit storm, one which won't END. It has gone so long that migrants came and the seasons have changed and they wont DIE. I wish they would die or do something so they can make more ale, but they WON'T. They just mope about while the bits of dwarf brain slowly slide down the wall and dry on the floor.
 
My question is what did I do wrong? Why did he just stand there and what can I do to change that the next time it happens.

You were lacking the proper workshop for that dwarf. The skill used for a mood is determined the moment the mood strikes - it's either the highest-levelled "moodable" skill like mason, carpenter, smith etc., or, if the dwarf has no experience in any moodable jobs, a crafting labour.

Next time, look at the skills the dwarf has and check if you have the workshops the jobs need (bowyers e.g. use the bowyer's workshop, something that you won't necessarily build otherwise), and make sure there's a crafting workshop available. If at all possible, it's also a good idea to give every dwarf a tiny bit of training in a desirable skill like armour-/weaponsmithing, mechanics, engraving or masonry.

Thanks! I think they are calming down now, and I will see about finding out how to train them. I thought that if i just gave them the job in dwarf therapist, it would work.

A Tip in smith training:

Prepare one or two magmaforges. Change the profile of the forges (YOu need a manager to do this) to only novice or lower. Then order gauntlets/wharever (I chose gauntlests because they give more exp, but it dosn't really matter) in repeat.
Then allow the job in everybody with therapist.

Thus, everybody will go to the forges in turn, make some baubles until they become novices, then leave the forge to the next. Instant metalworking moods!

Note: Reserve forges for the real smiths with the profile.

What do I do if, say a tanner just fell in to a fay mood and has no experience in anything but tanning?

Make sure you have a leather works.

Dabbling or lower. If you permit Novices to work at the forge, they'll carry on going until they hit Competent.

I am trying to make chickens lay bees as eggs. So far it only produces a single "Tame Small Creature" when a hen lays bees.
Honestly at the time, I didn't see what could go wrong with crowding 80 military Dwarves into a small room with a necromancer for the purpose of making bacon.

How so pessimistic? If everything goes well and never wrong, this would be such a boring game. You should try Nethack some time, it's DF squared for the motto 'losing is fun'. It's more fun to lose and do better next time around than to win all the time. It's what gambling addiction is based on.
