I'd check out "Economies of scale".
Altho it might take some looking for because simply typing the phrase to google won't find the game itself.

Operation Flashpoint (that mission editor is still top notch)

Armed Assault: Cold War Assault is still a great game, despite it's age...
Though, I'd have to say that ArmA 2 is still the best in the series.
(I deliberately went out of my way to buy the CD version, so that if anything happens to Steam or the wider internet in general, this is a game I cannot deal with losing.  :P )

Two games I can think of that took forever to fully explore all of the content:

Final Fantasy X (good luck with all the ultimate weapon obtaining and pokemon breeding)
Recettear (as in, completing the item database)

Something interesting about Cold War Assault if you would like to have it out of steam :

If you already own Operation Flashpoint (or purchased Cold War Assault on steam) , you can take your OFP/CWA serial , download the Cold War Assault installer on Bohemia Interactive website.

What is wrote can be misleading because the installer is not a simple patch, it's the actual full game

So download and install it then enter your OFP/CWA serial when promped, you will then obtain a complete install without steam of what is the equivalent of Operation Flashpoint + the Resistance expansion all patched to its latest version

And from there enjoy the bazillions of mods and addons

For the "detailed business games", alas they're few and far between.  The only other one in the category I can think of  is "Wall Street Raider" by Roninsoft, and it's PRETTY good.  http://www.roninsoft.com/wsraider.htm

There was the beginning of a Let's Play of an earlier version here http://www.bay12forums.com/smf/index.php?topic=46335.0   but it doesn't really showcase the game, he got caught with all his money in one company long term.  It does take a few plays to learn how to pump up or crash companies, how to pyramid, and how to find candidates for dismemberment, etc.

People should totally play Silent Storm. It's like this WWII tribute to XCOM. Everything's destructible and I just love creating a huge hole in the wall with a machine gun and then sniping everyone in the room with my sniper.

I haven't seen JRPGs mentioned much in this thread, so I'm going to say Persona 3 & 4 and the Suikoden series, because if you don't use a guide for them you'll spend hundreds of hours trying to get the best endings.

Silent Storm, I loved its game engine, and the battle mechanics were amazing, but the games buillt around them is kinda terrible with the storyline centric mission following and the simple fact that they gave up all the awesome parts of the game engine with the shitty panzerklein bullshit.
