Elder Scroll series
GTA V
The Sims 3

Kerbal Space Program, Kerbal Space Program with mods, the original 3 Mario games (1, Lost Levels and 3), the original few Megaman games, Kerbal Space Program, aaaand... I remember Saints Row 2 being a bit of a time sink. As well as the Sims games. Namely 2.

Total War series, mostly if you choose to do a long campaign or conquer the map. Each of those for me has at least 100 hours in them, except Napoleon but I always preferred the larger map of Empire.

You could do an entire run of the King's Quest series, or all of the Quest games by Sierra.

The first S.T.A.L.K.E.R is a nice game for general exploring and hoarding. For collectables, the LEGO Star Wars or LEGO Lord of the Rings games are fun, moving onto consoles "Paper Mario" and "Banjo Kazooie".

Mount and Blade series is a good time sink. What with having to raise lords disposition, raising honour and renown, funds to buy better items and so on and so forth.

Dwarf fortress obviously.

I've been playing STALKER call of pripyat with the misery mod for a couple of months now.
Other than that I guess Hearts of iron 3 and Victoria 2 are two large timesinks for me. Both have great mods.
You could probably spend a lot of time on AI War as well.
I've also played stepmania for a rather long time now.
Elona is quite time consuming as well.
And I almost forgot about La-Mulana.

Unreal is a nice atmospheric game to play, as is also any of the GTA games, and the classic Tomb Raiders.

Master of Orion 1 and 2, along with Civilization and Age of Empires games (with a good set of campaigns), are always decent timesinks along with Starcon 2: The Ur-Quan Masters.

Sins of a Solar Empire. A single multiplayer game can take many many hours to finish.
