Play as a greek character within the empire and go heretic as soon as practical, then replace the orthodox faith with a heresy.  Start in 867 so the orthodox faith isn't as big.  One way to go heretic is to get a high learning chaplin and tell him to research culture tech, it will eventually fire a heresy event.
