"That is based upon our culture.  Dwarf Fortress, while having some portions of our culture contained within, does not necessarily have to obey those ideas.  Hell, people have probably made fortresses that would ordinarily be said to be elven, using dwarves.  We cannot use any assumptions, because we will likely be wrong."
