Remember that you've likely wound up in DF 1.0. Think of all the wonderful things Toady has in the long-term plans. Many things are likely semi-randomized, so can vary between any given worldgen, even without raw modding. It's hard to know what to expect. Also, items made out of multiple materials.
Expect a far greater diversity of animals and plants than are currently in the game. You may find more (IRL) familiar plants than you expect, and perhaps unexpected fictional ones as well.
Physics quirks and other "unintended features" might have been patched, but could remain in effect for a while as a side-effect of the transfer. Don't count on them being here forever, though.
Your mind hasn't been reshaped, even if your body has. After all, what would be the point of putting forumites into the game if they were just turned into what it could already generate? In the last game, we certainly started out speaking and writing our own languages, but we picked up those of the natives through constant daily contact, as people often do in real life.
((Somehow i dont think He would patch out the !!SCIENCE!! and the !!FUN!! that various quirks allow people to get up to.
After all, one of the main attractions of DF is the quirkiness.))
