Fishing with cages?

So, I'm working on my first megaproject that has been ongoing for almost half a year in the real world. I just completed making a tower of pure obsidian through a 4 z-level ocean, engraved the entire thing and added a good 1165 floodgates around the entire thing with a system to catch fish, or so I thought.
 
I was under the impression that you could catch fish with regular cagetraps? (read it in some other ocean fortress thread that sparked interest in making my version)
It seems like the fish just pass them without a care in the world :s

And since I'm posting, does anyone know why pure water turns into saltwater once it hits tiles that are considered 'underwater'? As in, I've made some wells inside this underwater fortress and all water turns into saltwater, even if I have my dorfs bring it in by hand. I've had to abandon the idea of a underwater hospital because of this, or at least move it further underground.

Cool idea for a megaproject! As far as i know you can only catch large sea creatures wit cage traps (sharks, whales). I have heard that you can catch regular fish with animal traps, but i've never tested that. Does the water still turn salt when you place floors over the tiles?

Yes, and it turns back into regular water once I reach the z-levels above the watersurface funnily enough.

I'll try the animal trap thing though, thanks for the tip ^^

Constructed floors AND constructed walls in your sub-sea freshwater reserves.  The walls are salty too, apparently.

You can catch fish with cage traps, but not vermin fish. Sharks, whales, that sort of thing.

IMO the trouble it takes to successfully hunt big game fish isn't worth it unless you're purposefully going for that as a project, i.e. Whaleshoots.

Drain the ocean, line the map edges with cage traps, refill the ocean.... I would rather just slap a crossbow on a migrant and let him automatically haul fresh dead unicorn to my butcher shop.

I guess I was a bit quick to jump the gun. The cages seem to work on the larger creatures as you've mentioned. Seems I need to fill the animal traps with bait to catch anything, which isn't really worth it imo.

Whaleshoots was actually my inspiration, it's simply to make things harder. Also, this fishing system doubles as a drowning chamber entertainment centre. One wrong lever pull and the entire fortress dies, quick and easy ^^

I am planning on breaching the HFS and start some !fun! construction projects down there once I've fully finished this part of the megaproject (doing minor adjustments as is).

Any challenges ideas are welcome.
