Digging through an aquifer...?

I'm trying to learn how to get through one, I'm using this method:

But after the cave-in, below that platform there is more damp soil/sand, so I can't dig
Does this method still works? Or I'm missing something?

How many layers thick is your aquifer? The cave in method works nicely for a single layer aquifer and if you expand it, you can do multiple layers. However, it has very rapidly diminishing returns. Look up the double slit method. It allows you to get through an aquifer of any thickness with a 2x2 stair case that can be easily expanded to a 2x4 staircase.
