True, any horse can also kill it's rider. Happened a lot trying to break some breeds of horse.

Eh, it won't take long to break the Windborn OR their horses. Actually, apart from cheap labour, the horses will be the only valuable thing they have.

The horses aren't, they're loyal to there own riders. Nobody else can ride them without beginning from scratch and trying to break it. But not really important since I'm out of the game so what happens ain't my problem.

They're not disobedient, they're smart so if the rider does something they think is wrong they'll fight it. Pretty much they're follow there instincts a lot. You can't breed it out of them without breeding out what makes them smarter.

It will obey orders, but it also has a mind of it's own. Intentionally. They will help the rider fight because they will see and hear things he doesn't.

Thats what makes them smarter, they can act without orders protect themselves and the rider. It'd be much simpler to just put the horses with a specific soldier once they're no longed with the mother anymore so they can form a bond with him. Rather then trying to alter 100's pf generations of selective breeding.
