You Own a Tavern [suggestion game]

This is the year AL 156, and for some reason you decided to open a new tavern. So...

What is your name?
Your Gender?
What is your previous job? Describe it.
Of course, you know how to cook. What is your best dish, and how it is made?
Finally, Where are you going to start your business? You have almost free reign here but here are suggestions:

- On a major road junction, half a day from the nearest major town. A lot of travelers, supply problematic though.
- In the poor quarter of the capital city: non-picky customers, but they tend to pay you little.
- On the seaside of a major port: very picky customers, potentially very lucrative.
- any sensible suggestion, don't overdo/powergame

Suggestion:

Everyone calls me Ol Barkeep, which is a better name than the one I was given at birth.

I'm a guy.

Previous job was a soldier/cook. Without extra cooking pay, I just happened to have cooked one night and then it somehow became part of the job. At least, until I got tired of the whole "terrified for my life" and "really bad living conditions" that went with that sort of life.

Best dish is fried shark, served with a chili-lime sauce and dried seaweed. Cut the shark into 1 inch cubes, salt/pepper/garlic/flour it, fry quickly in hot oil, serve wrapped in the seaweed and with a skewer to dip in the sauce. Sauce is made by finely chopping chili peppers, cilantro, garlic, sugar, and lime juice, then boiling it and letting it cool, served warm.

Where? By the seaside, of course! Where else would we get the shark and the spices?

Shopkeeper, we sold goods and show thiefs that we could take on them and the final boss if they tried to steal anything.
The cod bomb, you take a cod, fill it with cheese and soak it with alcohol then cook.

You have a name, but people usually refer to you as Ol Barkeep.
You are good cook in the army, and thus you are very good in cooking and have exceptional stamina, but only mediocre in serving customers, negotiation, and housekeeping.
You know how to make Fried Shark (in-game recipe coming later), in addition to the stable recipes of : Beer, Veggie Soup, Meat Stew, Fish Stew, Baked Potatoes, etc (Suggestions, please).
After you retire from the Army, you now saved enough money and opened a very simple tavern, with 15 seats, a bar table, a cellar to keep food cool, and no beds, but if you have money you can always hire people to improve on it.
You have 1000 credits. From your experience in the army, you also have 20 research points.

It is still very early in the morning, and you thought you could go to places before you have to open for business. Where will you go, and for?

- Farmer's Market
- Town Plaza: Essentially a day labour market
- Docks
- Adventurer's Guild
- Magistrate's Office
- Banker
- Back Alleys
- etc

Modern beer probably won't spoil, but I don't think medieval beers are sealed to this kind of standards. In addition, I guess any respectable establishment will not serve beer which is improperly aged, too much or too little.

You have a shop sign, though you forgot what you told the carpenter to write on...

How about naming it The Shark's Fin? Fits the seaside area and specialty dish, plus it's got that perfect The Noun's Noun bar theme from mideival times and such.

Perhaps the beer would degrade in quality then, rather being thrown out entirely? Just an idea.

Modern beer "goes bad" in open air like you're thinking because it's heat pasteurized. That kills the yeast, which eliminates carbon dioxide production and allows foreign organisms to flourish. If we simply leave the beer in the fermentation vat without filtering or pasteurizing it...provided there are still sugars and live yeast in the mix, and provided we don't let it sit for enough weeks or months that autolysis occurs, it won't spoil, it will just get stronger.

Going bad in two days only makes sense if we're filtering it then leaving it in open containers, or in sunlight. There's really no reason to do that. Bottles have existed since before humans started recording historywooden casks for a little over 2000 years, beer-brewing was known specifically in europe 5000 years ago, and alcohol making in general has been known to humans for at least 12,000 years.

Anything fresh in the vat should be good for probably two months, and once it's filtered and put in a barrel, so long as we're using fresh, clean barrels and keeping them at cellar temperatures it should be good for at least months and in some cases years. Source 1 Source 2 Source 3 Source 4
