Only I'm encountering too many "danger 2" ships with 5+ pirates on them, lol...

Yeah the game's difficulty CAN be wonky still. We are tweaking it and soon we will come out with a rather enormous announcement!

Are there any FAQs or manuals yet?

Many elements of the game are self explanatory but some things are not really clear.
The starting choices.
Some are self explanatory like more ships encounters while others are odd like "Long dangerous nights"... what makes said nights dangerous?
What does "Drama" mean in terms of gameplay? Will pirates betray you more often perhaps?

Also while i'm at it i'd suggest increasing the usable foodstuff (like coconuts bananas ETC) hunger satiation from 100 to 25% since their effects are barely noticable unless you use a lot of them.

Oh I just realized paying crew salary isn't necessary, tavern makes them happy for free... provided you visit the tavern regularly.

Will pirates start eating at inns when they are hungry?
They seem to be more interested in drinking than eating even if they are on the verge of starvation death.

Keeping my pirates well fed has been the biggest frustration so far. That and the save times - it seems to take a super long time to save after you've explored more of the map.

Outside of that I've enjoyed the game so far. Looking forward to future updates.

After watching Aavak play this game it looked so fun that I picked it up and it's pretty great. I do have a question though, sometimes after raiding a island one of my pirates (this has happened twice with different pirates each time although the same island) refuses to get back on the ship and will just sit on the shore until she starves to death. I was wondering if this is a bug or if I am doing something wrong.

Did you toggle the grapple option in the crewmember's page? It seems to be not working as intended at the moment. A pirate with grapple turned off will grapple to an island but will not grapple back to your ship. The only other situation I can think of is that the crewmember's morale is low and he doesn't listen to you. If the icon above his head is yellow he may sometimes disobey your orders. If that is the case you can try the order repeatedly until he listens or pay him his wage from the crew page which will boost his morale up to full.
