Let's go for weaponization.

Use the metal to get a legendary metal crafter, then collect the non-masterwork things he has made into a stockpile, then load up some defense-turret minecart shotguns and wait for a siege.

Gild the world with copper! Show Nature who's boss. Bathe in the tears of the elves who come to visit.

hint: use paved roads. Way more efficient than floors.

Copper minecarts full of copper sawblades. Roll them down ramps into copper fortifications for lots of flying fun.

Copper armor and shield. Copper crossbows. Copper bolts. Copper flasks. For all civilians. Texas will look demilitarized compared to your fortress.

Replace all furniture with copper. If that isn't enough, pave copper roads throughout your fortress. Replace all stairs with copper stairs. Replace all walls with copper walls. If you still have copper left over, make it your trade good. Copper toys for all the little boys and girls, studded with copper.

Copper ammo.  It can still penetrate iron armored gobbos quite well.  Plus, if you use workshop profiles, you can set one to be the ammo factory to train up low level weaponsmiths :D.

I like all these ideas, Particularly the copper sawblade firing copper minecart shotguns, Put them inside copper towers, firing onto a surface paved in copper.

They're nearly as bad as badgers. Build a couple of anti-buzzard SAM sites marksdwarf towers and your fortress will look like Baghdad in 2003 from all the aerial bolt spam. You waste a lot of ammo and everything is covered in unslightly exploded buzzard bits and broken bolts.

Get some zinc, and make metric frap tons of brass, and then make everything brass, because unlike copper's horrid color brass looks awesome.

When I had a copper surplus I built a 9 tiles thick wall out of copper blocks reaching all the way to the top of the map around the entire volcano the fort was situated at. Had rooms inside it and slowly it turned to the place where most my population lived. Such cases.

I don't think you can stud the base metal with more of the same metal.  I run into that frequently with stone crafts and stone cabochons, or glass crafts with glass gems.
