A hardcore, dark, ultraviolent Chex Quest would be nice.
But that's just Doom.
Doom with cereal, silly!

Imagine, milk and shreds of fast-baked-grain-product spurting out violently from enemies and painting the walls a horrifying light tannish!

Chex are already pretty horrifying to me, both in cereal and snack mix form. :(

Casual Jagged Alliance:
Skills are Health, Marksmanship, and Agility.
Skills are in the form of 1-5 stars.
No secondary skills, everyone either has a "Healer/Lockpicker/Explosives" flag or they don't.
Every mercenary keeps their personality.
Drop the number of possible mercenaries to half as many.
Guns are generic "shotgun, pistol, rifle, assault rifle, SMG, sniper rifle"
Movement is similar to XCOM EU - you get to move a little, move a lot, move and shoot, or just plain shoot.
Increase the movement by 1.5x to 2x.
No need to defend locations you've captured
Maps are shrunk down to half the size. Maximum number of mercenaries per mission is 4.


Hardcore Papers Please:
Double the available amount of time per day.
Everyone in the line is an actual person, and you'd actually have to make the line shrink.

Papers Please is already pretty hardcore. It takes some serious indepth understanding of all of the rules.

Hardcore Thief: All light sources are hard (no extinguishing), enemies patrol semi-randomly in pairs instead of fixed and individually, and stationary guards have their backs to walls and hide behind riot shields.

Also the guy sold all the small loot and exchanged for copper pieces, making it impossible to carry out.
