I agree that ADDING to the army is a bad idea, but if we have them train more, perhaps improving there armaments...
The rest of what you say i think is fine.

The Kingdom of Koran(KK) waits on the borders, your general is commanding his troops to hold fire. They are slightly nervous, but that is normal. Their army stares at yours still. No action is taken for this at this time. They do not act either. However with their forces preoccupied with your stronger force, you receive word that the Free States of Koran(FSK) have begun an assault of their own. They manage to come up behind the army looking into yours and attack from behind. Your troops watch as others rush into their backs with salvaged weapons. The first wave takes out a good portion of their army before KK can retaliate. Your troops stay their hands. The battle now rages in front of your troops.

You attempt to send a secret emissary to obtain info more than what you have. You are aware of their manpower from FSK and their towns from simply looking.

The Kingdom of Koran
They have two generals
Their army is rallied
Their army is under-supplied
Their manpower is small.

They have one city (-3 food)
They have one village *being battled for* (1 food)
They have -2 food and are starving

Their military is preoccupied with the current battle. Information gets back to you that there is more in the city, but this small force is the major force. There is a tiny defensive force in the city, though it is probably recruits in an emergency.

No real action is taken as your bickering echoes through the halls. Seems no one can agree what to do with the extra supplies or what to do about the situation from what it allows.

Some of the known nobles have gone into hiding. Not many, but a few.

Kingdom of Northern Kiwiland
Your royal purple flag waves in the air proud.

You have 1 capital city (-3 food)
You have 3 farming villages(3 food)
You have 1 mining village(1 supply)

You have 1 general
Your army is ready(-1 supply)
Your weapons are supplied(-1 supply)
Your manpower is small-medium (-1 supply)

Your laws are unfair
Freedoms are tiny
The economy is great (+4 supply)
Taxes are felt to be unfair for the nobles(+1 supply)

We have +2 extra supply.

Expand our army, turning it in on ourselves and start nationalising the land of unco-operative nobility.  Let's embrace absolutism through extreme force.

Let's deal with the battle at hand, first.

Wait for one side to be clearly winning, then rush in and attack.

We shall be like the French in the Revolutionary War.

...You might want to look up what France actually did in that war. We certainly don't want to emulate them.
Apart from that, I agree.
Also, as I said before, if the defense tax on the nobles is a large part of their income, reduce it.
Also also, make it a scaling tax dependant upon how much land you own, and remind the nobles that there are a variety of other ways to meet their tax obligations.
Plus, improve roads, improve troops (training, equipment).

Music for the battle!

The battle to grotesque. The drums of war play and clash of metals against one another cause the death of many. The peasants with their initial strike weaken the army. However the armored and weaponized troops from the supplies of the Kingdom find the unarmored peasants to be slayed easily. While they had suffered initial losses, they make quite the comeback. Children made to fight by the Free States are cut down before your eyes, the blood littering the field of battle. A few of your men cry at the sight of the children. The battle comes to a close, and the Kingdom's tattered banner hangs above the battle. Their men preoccupied with making sure they are dead, it is when they go to the children, stabbing them in the head that your men cry out.

The battle is quick for what they had left. They were weakened and you suffered minimal losses, easily recruited back. Your men angered by the battle, fight with the force of demons. Shields are rammed into the enemy followed by swords. No one of their men left that battle. You've captured one of their two generals. Your men want this general killed for killing children. Even if they were sent to fight, they would  be easily dispatched in other ways. The armies eyes stare cold at the general. Sent to the city, you may do with him as you please, but with the stories told to the people, they wish for his death. He pleas for his life, and promises to serve.

Back to the army, with the weakened Free States of the obliteration of your army, you simply take their lands. Screw being a gentleman, right? The two farming villages are added to the empire. As for the Kingdom, you take their one farming village, but their walls to the city keep you out. Your men at this point are starving them out. You could try to attack, and while they have but a few left, climbing walls and such are still dangerous.

To the navy in your bay, you fight hard, make shift grenades are tossed at the boats, and many are lost. The good news is they retreated. The boats sail back to their city to try and reinforce the guard. The people, because of enemy actions, are strongly against the Kingdom, they parade the street in the council's honor over the victory of this battle. Women and Men drink and are merry, glad to what they think, the demons being dead.

With the territories taken, you notice the banners of two new nations. The Small Blue flagged nation of the Kingdom of Po. You can see signs of battle, but nothing continuing. They have three villages. The larger yellow flagged nation of Drega is quite the power. Their nation consist of six villages and one city.

Send ambassadors to them, give the populace free food (two of them?) and figure out who to remove next.

Hmmm. First, use two food and a supply on our new villages. With the loss of so many soldiers, I suspect there are a lot of widows/orphans/elderly/whatever who are in danger of starving. We can earn a lot of goodwill by fixing that, most likely. Then use the other food on our besieging army, don't want them losing morale there.
Any food that was overkill for those, put it into establishing long-term food storage, dried foods and the like, for emergencies. If the supplies are needed for that, put it in there, otherwise put it into roads.
Oh, and shove the general in a dungeon. Keep him in plain-but-servicable level conditions, tell him it's for his own safety and suggest he think of a way to make it worth our while to keep him alive, given the hate he's inspired. Make sure his guards are our most loyal, discrete ones, and that no-one else knows. If anyone asks, he's being tortured for information in some squalid hole.

Send ambassadors to them
+1

Publicly execute the captured general. Our new subjects are the mothers of those children he had slain. If we were to just imprison him, then we would have reasons flying around about how we tolerate the killing of defenseless children.

Publically Humiliate and Torture the general for information, then summarily hang him.

Starve out the remaining city, we have time.

I'll let the other council members handle the placement of supplies.

Hey, no need to torture him.
Just hold a trial for war crimes and public execution. or lock him up somewhere if he tells us shit and THEN execute him.

+1 for public humilation and execution, -1 for public torture

We don't want the peasants to be swayed by the show. We can put him bound to the stock thou, and leave him for the peasants to do as they please. Yes, that does sound great. But first we torture him for information.

Let's feed the war-weary new peasantry of ours, and since we can support it now hire soldiers again. Also, roads for infrastructure sound nice, as would be a report on those and other matters in our new domains.

The council discussed much about what to do with the general and in his hearing. Some wanted extreme measures, the others not so much. It ends when the general is taking to the public in chains. The people scream at him "Child killer!". Some throw fruit and stones at him as he is escorted, the guards doing so, quite wary of what they are doing. He had only known information you already know. Considering the power of Koran is severely weakened and they are starving out with damaged ships. The present little threat. Locked into place, a very dapper looking man comes out with a scroll readin to him. "General, you are convicted of war crimes on children. This is an atrocious crime to the people of Northern Kiwi. How do you plead?" He responds with a nervous yell, "I had no other choice!" The accuser coughs slightly to silence the public that boo him now. "You will not be executed publicly, however it is your peers who will judge you" He now turns to the public. "It is because it is the people's will that he be punished that the people themselves will decide what to do with the war criminal!" The people cheer and discussion begins among them. Some of them can't even wait, throwing fruit and sticks, when he is coated in different colors, some of it a little of his blood, two of the people go up to the accuser. "With the king and guard's approval, we wish to imprison the general. We are no killers. We are people, but we would like to see him rot in jail for the rest of his life! How say you representatives?" The people look up to the window where your meetings are held. How say you in this request?

With peace almost assured, your army continues to standby, starving out Koran. Recruiting some more now seems a great idea. After the battle is almost assured, men seem quite willing. They join your cause, and the militia grows larger, feeding them now becomes a challenge along with normal supplies of weapons and armor. Koran still starves, but their archers now shoot at your men, they are few enough that a turtle formation with the shields can handle it, but it is quite annoying when they sleep in the tents or are otherwise in other duties on their own. A few men die, but nothing worth noting.

The old Free States of Koran, integrated into your kingdom, are not happy. They had fought for freedom, only to be captured by another kingdom. They do not have enough power to riot or recruit men. In fact they are mostly just women now with a few elders in men. The women still discuss among themselves of freeing themselves once more.

Two new ambassadors are sent to these two new nations, however one is missing when they go to Drega, the yellow nation. Po simply refuses to speak without a peace offering from you. One ambassador comes back
